Ledger containing accounts for kitchens and by-products (the Sainsbury's factory at Blackfriars). The figures are given in a double entry bookkeeping format (the debit figures balance with the credit figures). The debit figures (money coming into the account from debtors) are given in the first set of rows (a quarter or half page), and these are followed by the credit figures (money going out of the account to creditors) in the second set of rows.

The figures are given for each financial period (13 periods in each financial year) plus a yearly total.. Includes purchases for re-sale; meat purchases; casings; bindings and cereals; flour and bread; sales to branches; wages and salaries; rent, rates and lighting.

Covers the financial years 1957/58, 1958/59 and 1959/60.
